It's Fun When It Works Out The Way I Imagined

I had an idea to make a mushroom sauced chicken thing. 

I thought it would be good with rice. 

Normally, back in the old days before the gluten-dairy thing, I would have thrown a can of Campbell's Cream of Mushroom soup in the mix, but that stuff's full of allergens... so I bought a bunch of mushrooms.

What I got was a delicious one pot meal. It started on the stove and ended in the oven and was a lovely, creamy, tasty concoction.  

I love it when an idea becomes a delightful new recipe.

Too bad there weren't any leftovers...

  1. Sounds really good - I'll have to try it. I did gluten-free for about six years, starting when my son (who is now 18) was two and was failure to thrive; but was able to (thankfully) abandon it as he got older.

    My sister and I cook a lot together (she has diabetes), and I think I'll be trying some of your recipes. If you check out my blog, I have a number of salad recipes that we've developed.
