What About Bob

The first two weeks on the gluten free diet was just about elimination, as opposed to substitution. Even after a month I haven't substituted very much.

There is one thing, though, besides rice crackers, that I've come to rely on in the past couple of weeks: Bob's Red Mill Biscuit and Baking Mix.

It makes a very good pancake, and last week I tried it for biscuits and found that I got a biscuit with a similar texture as the rich scones I make for Sunday suppers sometimes.

Since I figured out a single serving amount, I must confess that pancakes have become quite a comfort food for me lately. I've even been making a double batch on days that I'm going to be away from home so that I can bring along a pancake peanut butter and jam sandwich in case I can't eat what's offered where I am.

I mostly wanted to plug the pancake recipe that I've been using to great effect. I finally got it posted over at my other place.

Back to the company clean-up.
