Fruit Muffins

(Here's one that I made up for breakfast, and everyone liked them and everything!)


2 cups flour


1/4 cup wheat germ


1/2 cup Splenda (artificial sweetener)


1 Tbsp. baking powder


1/2 tsp. salt


2 cups fresh fruit, chopped up (1 small banana in chunks and a cup of coarsely chopped strawberries was very yummy)


1 cup skim milk


2 eggs, lightly beaten


1/4 cup Canola/ vegetable oil


2 tsp. vanilla


 


Preheat oven to 400* F.


Mix dry ingredients together in large bowl. Add fruit.


In another bowl, mix milk and egg, then add oil and vanilla. Add to dry ingredients. Fold together, mixing just til blended.


Divide into 12 paper lined or oiled muffin cups. Pop the muffin pan into the 400*F oven, then immediately reduce the oven temperature to 350* F. and bake for 15 - 20 minutes, til tops are lightly browned and the center of the center muffin tests done with a toothpick.

  1. This is a great and yummy looking recipe. My father-in-law just got diagnosed with type 2 this past week. I am going to print off a copy and give it to them. (they need a little sugar education)

  2. Here's that marinade:

    1/4 c. soy sauce

    3 Tblsp. Honey

    2 Tblsp. vinegar

    1 1/2 tsp. Garlic powder

    1 1/2 tsp. ginger

    3/4 c oil


    1 finely chopped green onion



    We'll see how well it works...I forgot to do it last night, so it'll only be in for about 2 hours.

    Tropical Muffins:

    For the fruit, I used chopped up papaya- about 1 cup, a medium banana, chopped/ cubed and 1/2 cup crushed, (& drained with a slotted spoon) pineapple.



    I also added, as an afterthought, 1/2 cup coconut milk and then had to add an extra 1/4 cup wheat germ and 1/4 cup plus about 2 Tbsp flour. It made 18 good sized muffins with the additions.



    Next time, or with another "tropical" fruit combination, I'd add 1/2 cup coconut milk (if it's on hand again) instead of 1/2 cup of the skimmed milk.
