Stay up too late making (MOST delicious) cherry jam and (INCREDIBLY refreshing) rhubarb-ginger cordial.
I don't know why jam and cordial make me so excited, but... there you go. Creating lovely fruity treats to bring back the memory of summer's heat and lushness in the middle of a cold, white winter day... well, it's another kind of nice.
My attempt at Nanking Cherry syrup was quite successful. I did an Internet search for cherry syrup made with (the low glycemic index) Agave Nectar. Although I didn't find that exactly, I found enough information to make a good attempt, as well as a delightful looking recipe for rhubarb-ginger cordial made with agave nectar.
I've got two double batches done, and another one ready to strain through the jelly bag tonight. SO good mixed with sparkling water or club soda.
This evening was spent chopping and grinding fresh Evan's Cherries to make a batch of jam.
Oh. My.
Is it ever good.
I have to decide if I'm going to make another batch of jam or freeze the rest of the cherries for a pie or something later.
I'll also be making a few more batches of cordial, since there's a truckload of rhubarb out back and The Husband brought me a Safeway vegetable bag full of ginger root. Perhaps something to put on the Christmas Open House menu...
I may also attempt ginger marmalade... I had good success years ago making orange marmalade.
